Hisa to Become Sushi Restaurant

Sake Hana's owners received a variance from the board of health Tuesday night.

A sushi restaurant will replace Hisa Japanese Cuisine on Westborough's rotary.

The Sake Hana received a variance to offer sushi Tuesday night from the board of health, which held a public hearing at the Forbes Municipal Building.

The board ruled that anyone involved with preparing the sushi must be certified. Sushi is a "potentially hazardous food," Health Inspector Terry Gilchrist said.

Yu Jiang said she and her husband will own the Sake Hana and relocate to this area from Brooklyn, N.Y.

Hisa opened at 21 South St. in 1998. Its management changed in the fall of 2010.
