"Tasting the Tour", part 3: Microwave Power French Toast

After one week of racing on the French island of Corsica and through the Provence region in southern France, the 100th Tour de France keeps moving on with incredible speed and grit. Right now, the cyclists – arguably, the best athletes in the world – just finished grinding their way up and flying down the stunningly spectacular and breath-sucking steep Pyrenees Mountains.

Grinding it out the way these elite athletes do takes a lot of sustained energy. With that in mind, Microwave Cooked Power French Toast is a terrific quick and easy meal to make that combines complex carbohydrates with protein, healthy fat and fresh fruit to give you a long-lasting energy burn, which is great in general and even better if you’re using it to fuel up for a good dose of physical activity. (The picture above shows what I had for breakfast this morning while putting this piece together that - along with buckets of iced coffee - powered me for a strong, smile-inducing rip on the bike through Northborough, Berlin, Bolton, Lancaster, Clinton and back.)
