Revised Fresh Whipped Cream Picture Book Recipe
Whoa! A couple days ago I tasted a spoonful of whipped cream I'd made earlier in the week and couldn't believe how salty it tasted though I sure could almost hear my mom's voice in my head: "Skip the salt, sonny. You don't need it." Right on!
The salt wasn't an accident. I usually like adding a very light dash of salt to something that's otherwise sweet to balance and enhance the flavor. That's actually a common cooking practice. But with the whipped cream, I clearly overshot that light dash and ended up pouring what was left in the container down the drain. I hate waste like that and sure don't want to aid and abet it.
